Appellations d'origine contrôlée: the French classification system for authentic regional food and drink. This is basically a set of quality control criteria for food in France. This guarantees that the Basque cheese you buy is truly from Basque and that its manufacturing complies with a strict list of regulations.

In other words, it’s going to be really good. Everything served at l’AOC restaurant has AOC certification, and it shows. This is without a doubt one of the best restaurants in Paris. The menu is incredible, the owners are super kind, and the décor is lovely. Order the rotisserie platter. That should be a rule. I’m calling the AOC people.
